Ingredients/Components

  • milk - 1/2 c
  • buttermilk - 2/3 c
  • shortening - 1/3 c
  • self-rising flour - 2 to
  • chicken broth
  • black pepper to taste - 1 item
  • chopped, cooked chicken I prefer chicken breasts

How to make southern chicken and dumplings:

In a large mixing bowl, combine 2 cups of flour with buttermilk and shortening. Mix well. Gradually add more flour until it forms a very firm dough. Roll out on floured surface to about 1/8 inch thick. Cut into 1 1/2 inch wide strips.

Bring broth to a rolling boil. Before dropping the strips of dough into the broth, break each strip into small pieces and press each piece with the fingers to flatten it. Drop the dough strips into the broth. Reduce the heat to medium and cover the pot. Cook for about 15 minutes. Stir occasionally. Remove the lid, add the milk. Continue cooking uncovered until the broth thickens. Stir in the chicken and season with black pepper as needed.
