How to make soft rolls:
Mix the yeast, water, 2 tablespoons sugar and 1/3 cup flour in a medium bowl until the mixture forms a thick, gluey paste. Cover the bowl tightly with plastic wrap; set it aside for 1 1/2 hours, or until the mixture is thick and frothy.Insert metal blade in food processor. Add 3 cups flour, 1 1/2 teaspoons salt and 2 tablespoons sugar. Process briefly to mix the dry ingredients, then add 3 tablespoons of butter and the first mixture. Beat the egg into the cooled milk. With the motor on, add the milk mixture to the dough in a thin stream. Process until dough is soft, sticky, taffylike and thoroughly kneaded. If mixture is too thin, add flour by tablespoons until dough holds its shape. Place mixture in large bowl; cover tightly with plastic wrap. Set aside in warm place until dough triples in volume, about 2 to 2 1/2 hours.
Remove dough from bowl and transfer it to a lightly floured work surface. Divide dough in half. Divide each half into 8 pieces. Gather each small piece into a ball and put them on a buttered baking dish, 1 inch apart.
