Skillet potato salad
Ingredients/Components
- sugar - 3 Tbsp
- salt - 1 tsp
- flour - 1 Tbsp
- water - 3/4 c
- cider vinegar - 6 Tbsp
- pepper - 1/4 tsp
- chopped celery - 1/2 c
- celery seed - 1/2 tsp
- medium onion, chopped - 1 item
- slices bacon, diced - 8 item
- potatoes, cooked, peeled and cubed - 2 lb
How to make skillet potato salad:
In 12-inch skillet over medium-high heat, cook bacon until browned. Drain off all but 1/4 cup drippings. Add onion and celery to bacon drippings. Cook until tender over medium-high heat.In small bowl, stir together sugar, flour, salt, celery seed and pepper. Stir into skillet. Add water and vinegar. Cook, stirring constantly, until mixture boils and thickens.
Add bacon and potatoes. Cook, stirring constantly, until potatoes are heated through. Serve warm or cold. Makes about 6 cups.
