Ingredients/Components

  • brown sugar - 1/3 c
  • cornstarch - 2 Tbsp
  • water - 1/2 c
  • vegetable oil - 1 Tbsp
  • soy sauce - 1/3 c
  • catsup - 1/4 c
  • green onion, sliced - 1 item
  • toasted sesame seed - 1 Tbsp
  • crushed red pepper flakes - 1/2 tsp
  • garlic clove, crushed - 1 item
  • dry sherry or apple juice - 1/4 c
  • whole chicken or 8 pieces - 1 item

How to make simmered chinese chicken:

Heat oil in Dutch oven or large skillet with lid. Brown chicken on all sides; remove fat from pan. (I use a "turkey baster.") In a medium bowl, mix together the soy sauce, brown sugar, catsup, sherry or apple juice, red pepper flakes, garlic and green onion. Pour mixture over chicken in Dutch oven. Cover tightly and simmer 35 to 40 minutes. Remove chicken to platter. Keep warm in 250° oven.

Skim fat from sauce. Blend cornstarch and 1 tablespoon of water together and stir into sauce with wire whisk to blend completely. Cook until thickened. Stir in sesame seed. Pour over chicken. Serves 6 to 8.
