Sicilian chicken
Ingredients/Components
- flour - 3 Tbsp
- Parmesan cheese - 6 Tbsp
- olive oil - 2 Tbsp
- onion, finely chopped - 1/2 item
- sliced mushrooms - 1 c
- rosemary, crushed - 1/2 tsp
- large boneless, skinless chicken breasts, cut up - 2 item
- can Italian Style stewed tomatoes - 1 1/2
How to make sicilian chicken:
Coat chicken with 4 tablespoons cheese, then flour, salt and pepper to taste. In skillet, cook chicken in oil over medium heat until done. Remove chicken to dish.In same skillet, cook mushrooms, onion and rosemary until soft. Add tomatoes. Cook uncovered until thickened. Return chicken to skillet and cover with tomato mixture. Top with remaining cheese. Serve over pasta or spaghetti.
