Ingredients/Components

  • lime juice - 1 Tbsp
  • ground cumin - 1/4 tsp
  • dried oregano leaves - 1/2 tsp
  • clove garlic, finely chopped - 1 item
  • fresh ginger, finely chopped - 1/4 tsp
  • finely chopped green onion with tops - 1/2 c
  • vegetable or corn oil - 1 Tbsp
  • flour tortillas 7 or 8-inch in diameter - 8 item
  • raw medium peeled and deveined shrimp - 1 lb

How to make shrimp fajitas:

Heat oil in 10-inch skillet or wok over medium heat. Add shrimp, lime juice, oregano, cumin, green onion, garlic and ginger. Cook about 5 minutes, stirring constantly, until shrimp are pink. Divide shrimp mixture evenly among warmed flour tortillas. Top with fresh salsa or guacamole. Fold tortillas over from one side to other and enjoy. Makes 4 servings.
