  • peeled shrimp - 2 lb
  • red wine vinegar - 4 lb
  • medium onion - 1 item
  • packets McCormick fajita marinade - 2 item
  • medium green bell pepper - 1 item
  • flour tortillas - 1 pkg
  • peanut or olive oil - 1 c

How to make shrimp fajitas:

Cut the onion and bell pepper into 1/4-inch strips, the longer the better. Combine this with half the oil and vinegar with 1 package marinade. Put into a large Ziploc bag. Combine shrimp with the other package of marinade and the remaining oil and vinegar. Put into another large Ziploc bag. Refrigerate both bags for 24 hours. Can be frozen for up to 15 days.

Option 1: If you cook on a stove, pour all of the marinade into a large skillet. Cook over medium heat, turning shrimp occasionally. Remove shrimp after 5 minutes; continue cooking vegetables until tender.

Option 2: If you want to barbecue on a grill, lay shrimp, onion and green pepper across the grill and cook about 10 minutes. Coals should be gray/white hot. Use 1/2 spoon of butter or margarine in a nonstick saucepan over medium heat and warm tortillas with shrimp, onion and pepper. Do not use extra salt as the marinade has enough. Squeeze a fresh lemon over the ingredients a minute or two before removing from the fire for a different taste.
