Sesame noodles
Ingredients/Components
- peanut butter - 1/4 c
- orange juice - 1/2 c
- soy sauce - 2 Tbsp
- sesame seed - 2 Tbsp
- rice vinegar - 3 Tbsp
- salt and fresh ground pepper - 1 item
- thin spaghetti - 8 oz
- dark sesame oil - 1/3 c
- honey mustard - 1 Tbsp
- hot chili oil - 1 Tbsp
- scallions optional - 4 item
How to make sesame noodles:
Place sesame seed in hot, dry skillet and toss gently over high heat until lightly toasted. Set aside. Cut scallions into 2 1/2-inch pieces. Make fringe on one end. Drop into ice water so they turn into brushes; set aside.Combine vinegar, peanut butter, honey mustard and soy sauce. Gradually stir in chili oil and sesame oil. Add orange juice, salt and pepper.
Bring large pan of water to a boil. Add spaghetti and let boil steadily 6 to 8 minutes or until noodles are cooked but have some bite. Drain at once. Shake well to remove excess moisture. Rinse with cold water. Transfer to a bowl. Pour dressing over noodles; add sesame seed and scallions. Toss thoroughly and cover tightly. Chill for 30 minutes. Serves 4.
