Senate bean soup
Ingredients/Components
- water - 2 qt
- salt and pepper to taste - 1 item
- medium onion - 1 item
- celery - 1/4 c
- dry Northern beans
- medium diced potato - 1 item
- or 2 meaty ham hocks - 1 item
How to make senate bean soup:
Soak beans overnight in enough water to cover. Wash and drain beans. To the two quarts of water, add beans and ham hocks. Cover and simmer 2 hours. Add potato, onion and celery. Simmer an hour longer. Remove ham hocks. Cut up meat and return meat to soup. Remove 1 cup of beans with liquid. Puree then return to soup.This is called Senate bean soup because it is the recipe used in the U.S. Senate dining room where it is a favorite.
