Ingredients/Components

  • boiling water - 2 c
  • olive oil - 2 Tbsp
  • minced onion - 1 c
  • cloves minced garlic - 2 item
  • cloves crushed garlic - 2 item
  • arborio rice
  • medium shrimp, chunks - 1/2 lb
  • sea scallops, cut in half - 1/2 lb
  • clam broth, hot - 1 c

How to make seafood risotto:

Slowly add the ingredients and cook until absorbed. Add 2 tablespoons brandy or cognac. Add seafood to rice mixture. Stir in remaining 1/4 cup olive oil. Serves 4.
