Seafood risotto
Ingredients/Components
- boiling water - 2 c
- olive oil - 2 Tbsp
- minced onion - 1 c
- cloves minced garlic - 2 item
- cloves crushed garlic - 2 item
- arborio rice
- medium shrimp, chunks - 1/2 lb
- sea scallops, cut in half - 1/2 lb
- clam broth, hot - 1 c
How to make seafood risotto:
Slowly add the ingredients and cook until absorbed. Add 2 tablespoons brandy or cognac. Add seafood to rice mixture. Stir in remaining 1/4 cup olive oil. Serves 4.Recipe categories: Mussels, Squid, Short Grain rice.
