Ingredients/Components

  • flour - 1 c
  • stick margarine - 1 item
  • water - 3 qt
  • oil - 1 c
  • Worcestershire sauce - 1 Tbsp
  • chopped celery - 1/2 c
  • cloves garlic, minced - 4 item
  • chopped onions - 1 c
  • can whole tomatoes - 1 item
  • crabmeat - 1 c
  • fish fillets - 1/2 lb
  • oysters - 1/2 pt
  • chopped bell peppers - 1/2 c
  • fresh peeled shrimp - 4 lb
  • green onion tops and parsley, finely chopped - 1/2 c
  • chopped okra, cooked - 2 c

How to make seafood gumbo:

Make Roux: Get oil hot in heavy pan. Gradually add flour, stirring continuously, until well mixed. Lower heat and continue stirring until peanut butter color. Set aside.

In a large aluminum Dutch oven pot, saute margarine, onions, celery, green bell peppers, garlic and okra for 10 minutes. Add roux, water and Worcestershire sauce. Cook for 1 hour. Add all other ingredients, except onion tops and parsley. Cook for another hour. Serve over boiled rice. Garnish with onion tops and parsley.
