Seafood gumbo
Ingredients/Components
- flour - 1 c
- stick margarine - 1 item
- water - 3 qt
- oil - 1 c
- Worcestershire sauce - 1 Tbsp
- chopped celery - 1/2 c
- cloves garlic, minced - 4 item
- chopped onions - 1 c
- can whole tomatoes - 1 item
- crabmeat - 1 c
- fish fillets - 1/2 lb
- oysters - 1/2 pt
- chopped bell peppers - 1/2 c
- fresh peeled shrimp - 4 lb
- green onion tops and parsley, finely chopped - 1/2 c
- chopped okra, cooked - 2 c
How to make seafood gumbo:
Make Roux: Get oil hot in heavy pan. Gradually add flour, stirring continuously, until well mixed. Lower heat and continue stirring until peanut butter color. Set aside.In a large aluminum Dutch oven pot, saute margarine, onions, celery, green bell peppers, garlic and okra for 10 minutes. Add roux, water and Worcestershire sauce. Cook for 1 hour. Add all other ingredients, except onion tops and parsley. Cook for another hour. Serve over boiled rice. Garnish with onion tops and parsley.
