Ingredients/Components
- salt - 1 item
- flour - 1 c
- butter - 2 Tbsp
- water - 1 gal
- oil - 1 c
- pepper - 1 item
- chopped celery - 1 c
- chopped onions - 1 c
- can Ro-Tel tomatoes - 1 oz
- can tomato paste - 1 oz
- chopped parsley - 1/2 c
- chopped green onion - 1/2 c
- crawfish tails - 1 lb
- crabmeat - 1 lb
- chopped bell pepper - 1/2 c
- garlic - 1 item
How to make gumbo:
Heat oil in a large, heavy pot. Add flour to oil and make a dark roux. Add celery and onions. Saute and add water. Simmer for 15 minutes. While this is cooking, heat butter in a small skillet. Add tomato paste and cook over low heat, about 5 to 7 minutes. Add Ro-Tel tomatoes to this, then add to other mixture. Cook for about 1 hour over medium heat. Add other ingredients and cook another 30 minutes.Thin Gumbo: May thicken by adding a cornstarch and water mixture. Shrimp and oysters may be added or chicken and sausage. Need to preheat chicken and sausage for a few minutes. This gumbo is best if cooked a day or two before you plan to serve it.
