  • pkg - 1 oz
  • milk - 1 c
  • salt - 1 tsp
  • melted margarine - 1/4 c
  • all-purpose flour - 1/4 c
  • lemon juice - 2 Tbsp
  • chopped onion - 1/3 c
  • shredded Cheddar cheese - 1 c
  • white pepper - 1/2 tsp
  • can water chestnuts, drained and sliced - 1 oz
  • half and half cream - 1 c
  • chopped pimiento - 2 Tbsp
  • cooked, peeled and deveined shrimp - 1 c
  • cooked, regular rice - 2 c

How to make seafood casserole:

Saute onion in margarine until tender. Add flour, salt and pepper. Cook until bubbly. Gradually add half and half and milk, stirring constantly; cook over low heat until smooth and thickened. Remove from heat. Add remaining ingredients except 1/2 cup of cheese. Stir to blend. Spoon mixture into a lightly greased 2-quart casserole dish. Sprinkle with reserved cheese. Bake at 325° for 30 minutes. Serves 6 to 8.
