Seafood casserole
Ingredients/Components
- pkg - 1 oz
- milk - 1 c
- salt - 1 tsp
- melted margarine - 1/4 c
- all-purpose flour - 1/4 c
- lemon juice - 2 Tbsp
- chopped onion - 1/3 c
- shredded Cheddar cheese - 1 c
- white pepper - 1/2 tsp
- can water chestnuts, drained and sliced - 1 oz
- half and half cream - 1 c
- chopped pimiento - 2 Tbsp
- cooked, peeled and deveined shrimp - 1 c
- cooked, regular rice - 2 c
How to make seafood casserole:
Saute onion in margarine until tender. Add flour, salt and pepper. Cook until bubbly. Gradually add half and half and milk, stirring constantly; cook over low heat until smooth and thickened. Remove from heat. Add remaining ingredients except 1/2 cup of cheese. Stir to blend. Spoon mixture into a lightly greased 2-quart casserole dish. Sprinkle with reserved cheese.
