- milk - 1 item
- butter - 2 Tbsp
- pinch of salt - 1 item
- all-purpose flour - 2 c
- cream of tartar
- bicarbonate of soda - 1 tsp
- Rub in butter; mix in enough milk to make a soft but not sticky dough
How to make scones:
Sift the first 4 ingredients into a bowl. Rub in butter; mix in enough milk to make a soft but not sticky dough. Turn the dough onto a floured surface; knead it lightly. Roll the dough out to a thickness of about 3/4-inch; cut as many scones as possible, using a 2 1/2-inch round cutter. Gather up the scraps; re-roll them to cut out more scones. Bake at 425° on a cookie sheet for 10 minutes, or until well risen and golden brown. Cool on a wire tray. Makes 8.Variations: Fruit Scones: Add 5 tablespoons sugar and 1/3 cup dried fruit before milk is added. (Continue as for plain scones.)Cheese Scones: Stir in 1/2 cup grated cheese with a pinch of cayenne pepper and dry mustard into the dry ingredients. Continue as for plain scones.
