  • butter - 1/4 c
  • medium potatoes, sliced 1/8-inch thick - 4 item
  • flour - 1/4 c
  • salt - 1 tsp
  • chopped onion - 2/3 c
  • pepper - 1/4 tsp
  • milk - 2 c
  • shredded Cheddar cheese - 2 c

How to make scalloped potatoes:

Melt butter in 1-quart saucepan over medium-low heat. Whisk in flour, salt and pepper. Cook, stirring 1 minute. Gradually whisk in milk. Cook and stir until sauce is smooth and thickened, 3 to 4 minutes.

Butter a 2-quart shallow baking dish. Cover bottom with 1/4 cup of the sauce. Add layers of half each of the potatoes, onions, remaining sauce and cheese; repeat layers. Cover with foil and bake in 350° oven about 1 hour and 15 minutes, until potatoes are tender. Remove foil. Bake 5 minutes longer.
