Savory chicken
Ingredients/Components
- flour - 1/2 c
- salt and pepper to taste - 1 item
- parsley, finely chopped - 1 Tbsp
- fresh mushrooms, sliced - 1 c
- large onion, sliced - 1 item
- olive oil, divided - 4 Tbsp
- large chicken breast halves boneless and skinless - 4 item
- red bell peppers, seeded and cut into 1-inch pieces - 2 item
How to make savory chicken:
Preheat oven to 350°. In a shallow plate, dredge chicken in flour. Shake off excess. In a large skillet, heat 2 tablespoons of olive oil. Quickly saute the chicken over medium-high heat, turning over once, until lightly browned. Remove to a 2-quart covered baking dish. Heat remaining oil in skillet. Over medium heat, saute onion, pepper strips and mushrooms, tossing occasionally, until onion is wilted and pepper strips are crisp-tender. Season with salt and pepper. Cover chicken with pepper mixture. Bake, covered, for 30 minutes. Uncover; bake 10 minutes more. Sprinkle parsley over all. Serve.Recipe categories: Chicken, Main dish, Poultry.
