Ingredients/Components

  • flour - 1/2 c
  • margarine - 1 Tbsp
  • chicken broth - 3/4 c
  • dry white wine - 3/4 c
  • salt and pepper to taste - 1 item
  • fresh parsley, chopped - 2 Tbsp
  • tarragon - 1 tsp
  • fresh mushrooms, sliced - 1/2 lb
  • shallots or green onions, minced - 2 item
  • boneless, skinless chicken breasts, cut into quarters - 2 item

How to make tarragon chicken:

In skillet, over medium heat, melt margarine. Add shallots. Saute for 1 to 2 minutes. Add mushrooms. Saute for 3 to 4 minutes. Remove vegetables; keep warm.

In a plastic bag, combine flour, salt and pepper. Add chicken pieces and toss to coat. In the skillet, saute chicken until brown on both sides and cooked through. Remove chicken and keep warm.

To skillet, add wine and chicken broth, stirring to deglaze pan. Add parsley and tarragon. Cook over high heat until mixture is reduced to sauce. Add sauteed vegetables; mix well. On serving plate, arrange chicken. Pour sauce over the chicken.
