Sauerkraut soup
Ingredients/Components
- chicken broth - 3 cans
- medium potatoes, peeled and cubed - 5 item
- medium onions, chopped - 2 item
- sauerkraut, rinsed and drained - 1 can
- smoked Polish sausage, cut into 1/2-inch pieces - 1 lb
- can large tomato paste - 1 item
- carrots, sliced 1/4 inch - 2 item
How to make sauerkraut soup:
In a large saucepan or Dutch oven, combine sausage, potatoes, onions, carrots and chicken broth; bring to a boil. Reduce heat and cover. Simmer for 30 minutes until the potatoes are tender. Add sauerkraut to tomato paste. Mix well. Return to a boil, reduce heat, cover and simmer 30 minutes longer. If a thinner soup is desired, add more chicken broth.
