Ingredients/Components

  • cans chicken broth - 3 1/2
  • can tomato paste - 1 oz
  • can sauerkraut, rinsed and drained - 1 oz
  • medium potatoes, peeled and cubed - 5 item
  • medium onions, chopped - 2 item
  • smoked Polish sausage, cut into 1/2-inch pieces - 1 lb
  • carrots, cut in 1/4-inch slices - 2 item

How to make sauerkraut soup:

In saucepan, combine potatoes, onions, carrots and chicken broth; bring to a boil. Reduce heat; cover and simmer for 30 minutes. Add sauerkraut and tomato paste; mix well. Return to a boil. Reduce heat; cover and simmer 30 minutes.

If a thinner soup is desired, add water or more chicken broth. Yield: 8 to 10 servings.
