Sauerkraut soup
Ingredients/Components
- sour cream - 1/2 c
- paprika - 1 tsp
- pepper to taste - 1 item
- minced parsley - 2 Tbsp
- medium onion, sliced thin - 1 item
- sauerkraut - 1 lb
- canned beef broth - 6 c
- smoked sausage, sliced Hillshire - 1/2 lb
How to make sauerkraut soup:
Place kraut in a colander, rinse under cold water; squeeze out most of water. Place in a saucepan, add onion, broth and paprika, bring to a simmer and simmer for about 1 hour until sauerkraut is cooked and tender. Add sliced sausage, pepper and simmer for 15 more minutes. Top each serving with a big spoonful of sour cream and a sprinkle of parsley. Makes 6 servings.Recipe categories: Soups & stews, Main dish, One Dish meal.
