Ingredients/Components

  • sour cream - 1/2 c
  • paprika - 1 tsp
  • pepper to taste - 1 item
  • minced parsley - 2 Tbsp
  • medium onion, sliced thin - 1 item
  • sauerkraut - 1 lb
  • canned beef broth - 6 c
  • smoked sausage, sliced Hillshire - 1/2 lb

How to make sauerkraut soup:

Place kraut in a colander, rinse under cold water; squeeze out most of water. Place in a saucepan, add onion, broth and paprika, bring to a simmer and simmer for about 1 hour until sauerkraut is cooked and tender. Add sliced sausage, pepper and simmer for 15 more minutes. Top each serving with a big spoonful of sour cream and a sprinkle of parsley. Makes 6 servings.
