  • milk - 3 c
  • salt - 1 tsp
  • flour - 1/4 c
  • butter - 2 Tbsp
  • 1/2 stick butter - 1/4 c
  • paprika - 1/4 tsp
  • pepper - 1/4 tsp
  • chopped onion - 1 c
  • chicken broth - 1 c
  • 4 oz - 1 c
  • shredded cabbage - 2 c
  • sliced carrots - 1 c
  • diced potatoes - 1 c
  • frozen lima beans - 1 pkg

How to make cabbage soup:

Saute onion in butter in a large heavy saucepan until tender. Add cabbage, lima beans, carrots, potatoes, broth and salt. Cover and bring to boil. Reduce heat and simmer until carrots and potatoes are tender, about 20 minutes.

Meanwhile, melt 1/4 cup butter in a 4-quart Dutch oven, blend in flour, paprika and pepper. Remove from heat, stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Remove from heat. Stir in cheese until melted. Do not boil. Add vegetables and liquid to cheese base. Heat and serve. Yield: 8 cups.
