Ingredients/Components
- sugar - 1/8 tsp
- milk - 1/2 c
- salt - 1/8 tsp
- flour - 1 item
- soda - 1/8 tsp
- boiling water - 1/2 c
- shortening - 1 Tbsp
- cornmeal - 4 Tbsp
- sweet milk - 1 pt
How to make salt rising bread:
Mix together cornmeal, salt, sugar and soda. Take 1/2 cup milk and 1/2 cup boiling water and mix together; pour over meal mixture. Let stand in warm spot overnight. It should be bubbly the next morning. If not discard and begin again.If bubbly, take 1 pint sweet milk, 1 pint boiling water, 1 teaspoon soda, 1/8 teaspoon salt and 1 teaspoon sugar. Add enough flour to make a batter. Add the first part (sponge) to batter. Let rise until double, then add 1 tablespoon shortening, 2 tablespoons sugar, 1 tablespoon salt and enough flour to make a stiff dough. Knead until smooth. Mold into loaves; grease well and place in pans to half full. Let rise to top of pan and bake 1 hour in slow oven at 300°.
