  • sugar - 3/4 c
  • salt - 1/2 c
  • garlic powder - 35 buttons
  • bell peppers - 6 item
  • large onions - 6 item
  • to 1 bushel tomatoes - 3/4 item
  • jalapeno peppers whole * - 1 item
  • anaheim peppers - 8 item

How to make salsa:

*For mild (4 to 6), medium (7 to 9) or hot (10 to 14).

Skin and quarter tomatoes. Pour off all juice before cooking (sitting in refrigerator overnight helps release more juice). Grind and chop peppers, onions and garlic. Mix all ingredients. Cook, uncovered (or partially covered), 5 to 8 hours (stirring occasionally) to desired texture (the longer the thicker). Makes approximately 28 pints.
