Ingredients/Components

  • butter - 1/4 c
  • eggs, separated - 3 item
  • lemon juice - 1 Tbsp
  • bread crumbs - 1/2 c
  • salt and pepper - 1 item
  • diced celery - 1/2 c
  • buttered bread crumbs for topping - 1 item
  • salmon, flaked - 2 c

How to make salmon loaf:

Drain and flake the salmon. Mix together the lemon juice, salt and pepper and add to the salmon. Add the beaten egg yolks, bread crumbs, melted butter and celery. Fold in stiffly beaten egg whites and mix lightly. Pour salmon mixture into greased mold and cover with buttered bread crumbs; set the mold in a pan of hot water. Bake in a 350° oven for 30 minutes; unmold.
