Salmon ball
Ingredients/Components
- chopped pecans - 1/2 c
- pkg - 1 oz
- salt - 1/2 tsp
- dash of Worcestershire sauce - 1 item
- grated onion - 3 tsp
- minced parsley - 3 Tbsp
- horseradish - 2 tsp
- freshly squeezed lemon juice - 2 Tbsp
- can red salmon - 1 lb
- several dashes of cayenne pepper - 1 item
- commercial liquid smoke - 1/4 tsp
How to make salmon ball:
Drain salmon; remove skin and bones, then flake with fork. In small bowl, mix cream cheese; blend in lemon juice, onion, horseradish, salt, Worcestershire sauce, cayenne pepper and liquid smoke (this is important). Check seasonings; might need more salt. Combine pecans and parsley and spread on sheet of waxed paper. Turn salmon out onto this mixture and turn this way and that until all sides are coated. Wrap in waxed paper and chill thoroughly before using. The spread will spread nicely when chilled. Makes 20 servings.Recipe categories: Appetizers, Spreads, Salmon.
