  • pkg - 6 oz
  • vanilla extract - 2 tsp
  • sour cream - 1 c
  • salt - 1/4 tsp
  • flour - 1 c
  • butter - 1/4 c
  • eggs, separated - 6 item
  • plus 1 c - 2 Tbsp

How to make royal marble cheesecake:

Melt chocolate morsels in top of double boiler over hot water. Combine 3/4 cup flour, 2 tablespoons sugar and salt. Cut in butter until particles are fine. Stir in 2 tablespoons chocolate. Press into bottom of 9-inch spring-form pan. Bake at 400° for 10 minutes.

Soften cream cheese with 1 cup sugar in mixing bowl. Blend in 1/4 cup flour and vanilla extract. Add egg yolks; beat well.** Blend in sour cream. Beat egg whites until soft peaks form. Fold into cheese mixture very thoroughly. Combine remaining chocolate with 1 3/4 cups cheese mixture. Pour half of plain mixture over baked crust. Top with spoonfuls of half the chocolate mixture. Cover with remaining plain mixture, then with chocolate mixture. Cut through batter with spatula to marble. Place in 400° oven. Immediately set at 300°. Bake 1 hour. Turn off oven; let remain in closed oven for 1 hour. Cool away from drafts for 2 to 3 hours. Chill at least 8 hours before serving. To cut, use a wet, hot, sharp knife.

**For a firmer cheesecake, add 6 whole eggs, one at a time, beating well after each. Omit beaten egg whites.
