Royal chicken

Royal chicken



  • salt
  • flour - 1/4 c
  • butter - 1/2 c
  • water - 2 Tbsp
  • cream - 1 c
  • pepper - 1/8 tsp
  • minced onion - 1 Tbsp
  • dry sherry - 1/4 c
  • mushrooms, quartered - 1 lb
  • large chicken breasts, halved and skinned - 4 item

How to make royal chicken:

Coat chicken with flour. Brown chicken in butter and set aside.

Cook mushrooms and onion in drippings for 5 minutes. Stir in cream, sherry, salt and pepper. Blend well. Add chicken. Reduce heat and simmer for 20 minutes. Remove chicken to warm plate.

Blend 1 tablespoon flour with water and add to liquid in pan, stirring constantly. Cook until thickened. Spoon over chicken and serve.
