Ingredients/Components
- stick margarine - 1/2 item
- salt to taste - 1 item
- large onion, chopped - 1 item
- large can mushrooms, sliced - 1 item
- Velveeta cheese, cut up - 1 lb
- small can Ro-Tel - 1 item
- or 8 medium baking potatoes, peeled, cubed and boiled - 7 item
- large bell pepper, chopped optional - 1 item
How to make rotel potatoes:
Drain potatoes and lay in casserole dish. Saut?© bell pepper, onion and mushrooms in margarine. Add Ro-Tel and cut up cheese. After mixture melts, pour over potatoes. Heat in oven until mixture bubbles at 350°.Recipe categories: Side dish, Potato, Vegetables.
