Ingredients/Components

  • butter - 4 Tbsp
  • water - 1 c
  • oregano - 1 item
  • salt and pepper - 1 item
  • cloves minced garlic - 2 item
  • juice of 2 lemons

How to make roast lamb:

Cut incisions in meat and fill with garlic mixed with salt and pepper. Rub leg of lamb with lemon juice, oregano and additional salt and pepper. Place in roasting pan with water and top with butter. Bake in hot oven (450°) until browned, then lower heat to 350°. Cover and bake until done. When meat is half-cooked, peel and quarter potatoes and place in roasting pan around the lamb. Uncover during last few minutes of baking time to brown potatoes. Serves 6 to 8.
