  • hot strong coffee - 1 c
  • Port wine - 2 Tbsp
  • leg of lamb - 1 (4
  • clove garlic, sliced - 1 item
  • each: dry mustard and ginger - 1 tsp

How to make roast lamb:

Sauce:2 tsp. sugar1 c. hot strong coffee2 Tbsp. light cream2 Tbsp. Port wine Insert cloves of garlic strips into slits in lamb. Spread mustard and ginger over lamb. Place in roasting pan, fat side up and roast 3 to 3 1/2 hours. After 1 hour add the coffee sauce. Baste occasionally. Pour off fat. Blend in 2 tablespoons flour with 1/2 cup mint jelly. Season to taste. Cook until thick.
