Ingredients/Components
- sugar - 1 c
- vanilla - 2 tsp
- milk - 2 c
- salt - 1/4 tsp
- egg yolks - 5 item
- whipping cream - 1 c
- light cream - 2 c
- rice - 1 c
How to make rice pudding:
In top of double boiler, mix rice, light cream, milk, sugar and salt. Cover and cook 1 to 1 1/2 hours, stirring occasionally. Lightly mix egg yolks with vanilla and slowly add to hot rice, stirring constantly. Cook a few minutes to thicken. Empty into bowl. Cover and refrigerate, stirring occasionally. Whip cream and add to cold rice. May be served with strawberry or other fruit sauce, if desired. Serves 6.Recipe categories: Desserts, Puddings and mousses, Rice.
