Ingredients/Components
- sugar - 2/3 c
- eggs - 4 item
- vanilla - 1 tsp
- milk
- salt - 1 tsp
- raisins - 3/4 c
- rice - 1 c
How to make rice pudding:
Combine 1/4 cup sugar, 1 teaspoon salt, 1 quart milk, 1 cup rice and raisins in double boiler. Steep until rice is done. Bring to boil 1/2 quart milk. Beat eggs gently and add remaining sugar. Pour hot milk into beaten egg mixture and add vanilla. Combine and fold gently egg mixture into rice mixture. Pour into 3-quart casserole. Dot with butter and sprinkle with cinnamon. Place casserole in shallow pan of water. Bake 1 hour until custard is set at 350°, until knife inserted comes out clean.Recipe categories: Desserts, Puddings and mousses, Rice.
