How to make gingerbread cookies:

I had two excellent reasons to begin making gingerbread cookies, my children, Jamie and Jessica. They are now 22 and 17 years old, but they still want gingerbread cookies at Christmastime!

Combine water, shortening and butter in a small saucepan. Cook over medium heat, stirring constantly until shortening and butter melts.

Combine flour, soda, ginger, cinnamon and salt in a large mixing bowl. Add to shortening mixture, stirring well. Blend in molasses. Dough will be very stiff. Form into two flat disks and wrap in plastic. Chill overnight.

Working with one disk at a time, roll dough to 1/4-inch thickness on a lightly floured surface. Cut with 4-inch gingerbread man cutter (or any size/shape cutter). Carefully transfer to cookie sheets and press raisins or red hots into dough for eyes, nose and mouth. Bake 8 to 10 minutes or just until cookies are set (do not overbake). Allow cookies to cool on sheets for 2 minutes before removing to wire racks to cool. Store in an airtight container. They will stay soft for 2 to 3 weeks, if they last that long!

May be decorated with piped icing or a sugar glaze as desired. Yields 3 dozen (4-inch) cookies.Sugar Glaze For Gingerbread Cookies:2 c. sifted powdered sugar3 to 4 tsp. milk1 to 2 Tbsp. white corn syrup food coloring Mix together until blended. May be used as a glaze over entire cookie or can be drizzled from a fork over cookies. Decorator sprinkles can be added while glaze is wet. Can also be tinted (add 1 drop at a time). Allo
