Ingredients/Components

  • skim milk - 1/2 c
  • sliced zucchini - 1 c
  • low calorie mayonnaise - 1/3 c
  • olive oil - 2 tsp
  • freshly grated Parmesan cheese - 1/4 c
  • garlic clove - 1 item
  • broccoli flowerets - 2 c
  • cooked rice - 3 c
  • fresh parsley, snipped - 1/4 c
  • tomato, seeded and chopped - 1 item
  • sliced, fresh mushrooms - 1 c
  • ground white or red pepper - 1/4 tsp

How to make rice primavera:

Heat garlic with oil in large skillet over medium-high heat; discard garlic. Cook broccoli, zucchini and mushrooms in oil until almost tender-crisp. Add tomatoes and parsley; cook one minute longer. Remove vegetables; set aside. Place mayonnaise in same skillet; stir in milk, cheese and pepper. Cook over medium heat, stirring until smooth. Add rice; toss to coat. Stir in reserved vegetables; heat through. Serve immediately. Makes 6 servings.
