Rice primavera
Ingredients/Components
- skim milk - 1/2 c
- sliced zucchini - 1 c
- low calorie mayonnaise - 1/3 c
- olive oil - 2 tsp
- freshly grated Parmesan cheese - 1/4 c
- garlic clove - 1 item
- broccoli flowerets - 2 c
- cooked rice - 3 c
- fresh parsley, snipped - 1/4 c
- tomato, seeded and chopped - 1 item
- sliced, fresh mushrooms - 1 c
- ground white or red pepper - 1/4 tsp
How to make rice primavera:
Heat garlic with oil in large skillet over medium-high heat; discard garlic. Cook broccoli, zucchini and mushrooms in oil until almost tender-crisp. Add tomatoes and parsley; cook one minute longer. Remove vegetables; set aside. Place mayonnaise in same skillet; stir in milk, cheese and pepper. Cook over medium heat, stirring until smooth. Add rice; toss to coat. Stir in reserved vegetables; heat through. Serve immediately. Makes 6 servings.Easy, leftover, quick, side dish, vegetarian, rice, vegetable, heart healthy, low cholesterol and meatless.
