Ingredients/Components
- rice, uncooked - 1 c
- bacon drippings or oil - 4 Tbsp
- chopped onions - 3/4 c
- chopped green pepper - 1/2 c
- chopped celery - 1/2 c
- can stewed tomatoes - 1 item
- water - 1 c
- salt to taste - 1 item
- chili powder, hot sauce or jalapeno pepper to taste - 1 item
How to make rice casserole:
Heat oil and add uncooked rice. Cook until rice is lightly brown. Add vegetables and cook until softened. Add tomatoes, water and spices. Set heat for simmer. Cook for 20 to 25 minutes in covered pan.Recipe categories: Side dish, Main dish, Casseroles.
