Ingredients/Components

  • sugar
  • cinnamon - 1 tsp
  • vanilla - 2 tsp
  • salt - 1/2 tsp
  • flour
  • brown sugar
  • oil - 1/2 c
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • egg - 1 item
  • buttermilk or sour milk - 1 c
  • chopped rhubarb and 1/2 c

How to make rhubarb muffins:

Topping:1/3 c. sugar1 tsp. cinnamon Topping: Sprinkle on before baking.

Mix together brown sugar, oil, egg, vanilla and buttermilk or sour milk. Then add dry ingredients; mix well. Add rhubarb and nuts. Then add topping before cooking. Bake at 400° for 20 to 25 minutes.
