Rhubarb muffins
Ingredients/Components
- sugar
- cinnamon - 1 tsp
- vanilla - 2 tsp
- salt - 1/2 tsp
- flour
- brown sugar
- oil - 1/2 c
- baking powder - 1 tsp
- baking soda - 1 tsp
- egg - 1 item
- buttermilk or sour milk - 1 c
- chopped rhubarb and 1/2 c
How to make rhubarb muffins:
Topping:1/3 c. sugar1 tsp. cinnamon Topping: Sprinkle on before baking.Mix together brown sugar, oil, egg, vanilla and buttermilk or sour milk. Then add dry ingredients; mix well. Add rhubarb and nuts. Then add topping before cooking. Bake at 400° for 20 to 25 minutes.
