  • sugar - 1 c
  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • flour - 1 c
  • brown sugar - 1 c
  • cornstarch - 2 Tbsp
  • water - 1 c
  • melted butter - 1/2 c
  • oatmeal - 3/4 c
  • diced rhubarb - 4 c

How to make rhubarb crunch:

Mix until crumbly; press half of crumbs into greased 9-inch pan. Cover with rhubarb. Combine remaining ingredients. Cook until thick and pour over rhubarb. Top with remaining crumbs. Bake in 350° oven for 1 hour. Cut into squares. Serve warm plain or with Cool Whip.
