Ingredients/Components

  • sugar
  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • flour
  • brown sugar - 1/2 c
  • butter - 1/2 c
  • buttermilk - 1 c
  • baking soda - 1 tsp
  • egg - 1 item
  • nuts - 1/2 1
  • finely chopped rhubarb - 2 c

How to make rhubarb cake:

Topping:1/4 c. butter1/2 c. brown sugar1 tsp. cinnamon1/2 to 1 c. nuts1/4 c. flour Cream together sugar, butter, egg and vanilla. Add flour, baking soda and salt. Then add buttermilk. Combine 1/2 cup flour and rhubarb. Then add to the batter.

Combine Topping ingredients. Sprinkle topping over batter and bake at 350° for 35 to 45 minutes. Serve plain or with whipped cream.
