Ingredients/Components

  • sugar - 1/2 c
  • salt - 3/4 tsp
  • flour - 1 c
  • boiling water - 1 c
  • shortening - 3/4 c
  • plain flour
  • beaten eggs - 2 item
  • yeast - 1 cake
  • mashed potatoes - 1 c
  • lukewarm water - 1/2 c

How to make refrigerator rolls:

Combine boiling water, shortening, sugar and salt. Cool to lukewarm and add yeast, softened in lukewarm water. Mix to smooth batter with 1 cup flour. Stir in potatoes and eggs. Let rise 2 hours or until light and bubbly. Add remaining flour to make soft dough.

Knead lightly on floured surface. Cover and place in refrigerator until ready to use, about 1 1/2 to 2 hours, before serving. Remove portion of dough and form in rolls of desired shape. Arrange in greased pan and let rise until double in bulk. Bake in moderately hot oven (400° to 425°) for 20 to 25 minutes. Makes 3 to 4 dozen rolls.
