Refrigerator pickles
Ingredients/Components
- cup vinegar - 1 item
- cups sugar - 2 item
- sweet red pepper, thinly sliced - 1 item
- cups thin slices of hot house cucumbers - 7 item
- cup thin sliced onions - 1 item
- tsp each: celery seed, turmeric, mustard seed - 1 item
How to make refrigerator pickles:
Mix together cucumbers, onions, red pepper in large bowl. Combine sugar, vinegar and spices until sugar is dissolved. Pour mixture over cucumber mixture and refrigerate overnight. Next day, pack into plastic or glass containers and chill for 3-4 days before serving. Store in refrigerator. These can be frozen. Be sure to defrost in refrigerator and leave 1 inch space of top container to allow for expansion.Recipe categories: Vegetables, Summer, Seasonal.
