Ingredients/Components

  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • double-acting baking powder - 2 tsp
  • skim milk - 1 c
  • egg, lightly beaten - 1 item
  • sugar, divided - 1/2 c
  • cake flour, sifted and divided
  • whipped butter, melted and divided - 1/2 c
  • plumped golden raisins, drained - 3/4 c

How to make raisin crumb cake:

Preheat oven to 350°. Spray a 13 x 9 x 2-inch baking dish with nonstick spray. Line pan with sheet of wax paper and spray again with nonstick spray; set aside. In a large bowl, combine 1 3/4 cups of flour, 1/4 cup of sugar and baking powder. In small mixing bowl, combine milk, 1/4 cup plus 1 tablespoon butter, egg and vanilla; stir. Pour into dry ingredients. Using electric mixer at medium speed, beat until blended. Stir in raisins. Pour into pan and spread evenly; set aside.

In a small bowl, combine 1/2 cup flour, 1/4 cup sugar, 3 tablespoons butter and the cinnamon. Blend with a fork until crumbly. Sprinkle over cake and bake 25 to 30 minutes, until toothpick comes out clean. Let cool 10 minutes in pan, then use spatula to lift out to wire rack. Cool completely. Cut into 12 pieces. Serves 12. Contains 190 calories, 5 gm fat and 128 mg sodium.
