Ingredients/Components

  • sugar - 1/4 c
  • milk - 1 c
  • salt - 1 tsp
  • baking powder - 3 Tbsp
  • egg - 1 item
  • all-purpose flour - 1 c
  • cooking oil
  • cottage cheese - 1 c
  • sharp Cheddar cheese, grated - 8 oz
  • corn meal - 1 c
  • cans green chilies - 2 item

How to make mexican cornbread:

Mix the first five ingredients in a bowl and add egg, milk, cottage cheese and cooking oil. Pour 1/2 of the batter into a well-greased pan. Add grated cheese and green chilies. Add remaining batter. Cook at 400° for 30 to 45 minutes. Good with chili.
