Pumpkin roll
Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- eggs - 3 item
- vanilla - 1/2 tsp
- flour - 3/4 c
- butter - 4 Tbsp
- baking soda - 1 tsp
- pumpkin - 2/3 c
- powdered sugar - 1 c
- cream cheese, softened
How to make pumpkin roll:
Filling:8 oz. cream cheese, softened4 Tbsp. butter1 c. powdered sugar1/2 tsp. vanilla Preheat oven to 375°. Mix eggs and sugar together. Add pumpkin, baking soda, cinnamon and flour to egg mixture and beat until smooth. Spray jellyroll pan with Pam. Spread mixture evenly in pan. Bake 12 to 15 minutes. Turn out, while hot, onto towel which has been sprinkled with powdered sugar. Roll up lengthwise and let cool.Meanwhile, prepare filling. Beat filling ingredients together until smooth. Unroll cooled cake and spread filling evenly. Re-roll cake and refrigerate.
Note: One large can of Libby's pumpkin makes 5 rolls.
