  • sugar - 1 c
  • cinnamon - 1/2 tsp
  • eggs - 3 item
  • vanilla - 3/4 tsp
  • flour - 3/4 c
  • butter
  • baking soda - 1 tsp
  • pumpkin - 2/3 c
  • powdered sugar - 1 c
  • cream cheese, softened - 8 oz

How to make pumpkin log:

Filling:2 Tbsp. butter8 oz. cream cheese, softened3/4 tsp. vanilla1 c. powdered sugar Grease cookie sheet bottom and sides. Line with wax paper. Spread batter evenly onto wax paper and bake at 350° for 15 minutes. Turn cake onto a damp powdered sugared tea towel. Remove wax paper from cake. Roll cake in tea towel. Cool completely.

Filling: Beat ingredients together until smooth. Unroll cake and spread filling out evenly. Re-roll cake, sprinkle with powdered sugar and chill for 3 hours before serving.
