  • sugar - 1 c
  • cream cheese - 8 oz
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • soda - 1 tsp
  • baking powder - 1 tsp
  • powdered sugar
  • self-rising flour - 3/4 c
  • pumpkin pie spice
  • margarine - 4 Tbsp
  • lemon juice - 1 tsp
  • canned solid pumpkin - 2/3 c

How to make pumpkin roll:

Filling:1 c. powdered sugar4 Tbsp. margarine8 oz. cream cheese1/2 tsp. vanilla Beat eggs on high speed for 5 minutes; reduce speed and add sugar, pumpkin and lemon juice. Mix until well blended. Combine remaining ingredients and add slowly to egg mixture. Mix until well blended. Grease and flour 15 x 10 x 1-inch pan. Pour mixture into pan and bake at 375° for 15 to 20 minutes. On kitchen towel sprinkled with powdered sugar, dump cake and roll up. Let cool rolled up for 30 minutes.

Mix all ingredients for filling together. Unroll cake; spread filling on cake. Re-roll. Place on platter before serving.
