- flour - 3/4 c
- baking powder - 1 tsp
- pumpkin - 2/3 c
- ginger - 1/4 tsp
- margarine - 2 Tbsp
- 10x sugar
- lemon - 1/4 tsp
How to make pumpkin roll:
Filling:1 c. 10x sugar1 (8 oz.) cream cheese2 Tbsp. margarine3/4 tsp. vanilla Mix flour, baking powder, cinnamon and salt. In a separate bowl, beat eggs until thick. Add sugar gradually, then add lemon and pumpkin. Fold in dry ingredients. Spread in a greased and floured cookie sheet (10 x 15-inch). Bake at 375° for 15 minutes. Take out of oven and turn cake onto a powdered towel (if desired you can also sprinkle chopped nuts on towel); roll up in towel while warm. In another bowl, mix all filling ingredients together. Unroll cake and spread filling evenly, then roll back cup. Chill for 1 hour.Recipe categories: American, Vegetables, North american.
