  • sugar - 1 c
  • cinnamon - 2 tsp
  • cream cheese - 8 oz
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • salt - 1/2 tsp
  • chopped nuts - 1 c
  • flour - 3/4 c
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • pumpkin - 2/3 c
  • ginger - 1 tsp
  • margarine - 4 Tbsp
  • lemon juice - 1 tsp
  • Stir in the pumpkin and lemon juice

How to make pumpkin roll:

Beat eggs for 5 minutes, then gradually add the sugar. Stir in the pumpkin and lemon juice. Mix dry ingredients together; add to pumpkin mixture. Spread in greased and floured 15 x 10-inch pan. Top with the chopped nuts. Bake at 375° for 15 minutes. Turn out on a towel which has been sprinkled with confectioners sugar. Starting at the narrow end, roll towel and cake together. Cool. Unroll. Fill with filling; re-roll cake. Chill before cutting into slices.Filling:1 c. powdered sugar8 oz. cream cheese4 Tbsp. margarine1/2 tsp. vanilla Beat together until smooth. Spread on cake.
