Pumpkin roll
Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- cream cheese - 8 oz
- eggs - 3 item
- vanilla - 1/2 tsp
- salt - 1/2 tsp
- chopped nuts - 1 c
- flour - 3/4 c
- nutmeg - 1/2 tsp
- baking powder - 1 tsp
- pumpkin - 2/3 c
- ginger - 1 tsp
- margarine - 4 Tbsp
- lemon juice - 1 tsp
- Stir in the pumpkin and lemon juice
How to make pumpkin roll:
Beat eggs for 5 minutes, then gradually add the sugar. Stir in the pumpkin and lemon juice. Mix dry ingredients together; add to pumpkin mixture. Spread in greased and floured 15 x 10-inch pan. Top with the chopped nuts. Bake at 375° for 15 minutes. Turn out on a towel which has been sprinkled with confectioners sugar. Starting at the narrow end, roll towel and cake together. Cool. Unroll. Fill with filling; re-roll cake. Chill before cutting into slices.Filling:1 c. powdered sugar8 oz. cream cheese4 Tbsp. margarine1/2 tsp. vanilla Beat together until smooth.
