Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- cream cheese - 6 oz
- eggs - 3 item
- vanilla - 1/2 tsp
- salt - 1/2 tsp
- flour - 3/4 c
- nutmeg - 1/2 tsp
- baking powder - 1 tsp
- pumpkin - 2/3 c
- ginger - 1 tsp
- chopped walnuts - 1 c
- lemon juice - 1 tsp
- butter or oleo - 4 Tbsp
- 10x sugar
How to make pumpkin nut roll:
Filling:1 c. 10x sugar6 oz. cream cheese4 Tbsp. butter or oleo1/2 tsp. vanilla Filling: Beat until smooth.Beat eggs on high speed for 5 minutes. Gradually add sugar. Stir in pumpkin and lemon juice. Mix dry ingredients together separately and fold into pumpkin mixture. Spread in a 15 x 10 x 1-inch pan lined with wax paper. Sprinkle with nuts. Bake at 375° for 15 minutes. Turn out on towel and remove wax paper. Sprinkle with 10x sugar. Roll towel and cake together like a jelly roll. Cool. Unroll. Spread with filling. Re-roll. Keep refrigerated. May be frozen.
