  • sugar - 1 c
  • cinnamon - 2 tsp
  • cream cheese - 6 oz
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • salt - 1/2 tsp
  • flour - 3/4 c
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • pumpkin - 2/3 c
  • ginger - 1 tsp
  • chopped walnuts - 1 c
  • lemon juice - 1 tsp
  • butter or oleo - 4 Tbsp
  • 10x sugar

How to make pumpkin nut roll:

Filling:1 c. 10x sugar6 oz. cream cheese4 Tbsp. butter or oleo1/2 tsp. vanilla Filling: Beat until smooth.

Beat eggs on high speed for 5 minutes. Gradually add sugar. Stir in pumpkin and lemon juice. Mix dry ingredients together separately and fold into pumpkin mixture. Spread in a 15 x 10 x 1-inch pan lined with wax paper. Sprinkle with nuts. Bake at 375° for 15 minutes. Turn out on towel and remove wax paper. Sprinkle with 10x sugar. Roll towel and cake together like a jelly roll. Cool. Unroll. Spread with filling. Re-roll. Keep refrigerated. May be frozen.
