Pumpkin roll
Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- eggs - 3 item
- vanilla - 1/2 tsp
- pkg - 1 oz
- salt - 1/2 tsp
- flour - 3/4 c
- baking powder - 1 tsp
- powdered sugar - 1 c
- ginger - 1/2 tsp
- margarine
- nuts optional - 1 c
- lemon juice - 1 tsp
- pumpkin mix - 1 c
How to make pumpkin roll:
Filling:4 Tbsp. margarine1 (8 oz.) pkg. cream cheese1 c. powdered sugar1/2 tsp. vanilla Beat eggs at high speed for 5 minutes. Add sugar slowly. Stir in pumpkin mix and lemon juice. Mix dry ingredients together; fold into pumpkin mixture. Blend well. Pour evenly into 15 x 10-inch jelly roll pan which has been sprayed with Pam. Bake at 375° for 15 minutes. When done, turn out onto towel coated heavily with powdered sugar. Roll up from short end. Refrigerate on towel until cold.Filling: Beat all ingredients well. Unroll cake from towel and spread filling on roll. Roll up again. Wrap in foil or waxed paper and refrigerate.
Note: Use a clean towel.
