  • sugar - 1 c
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • pkg - 1 oz
  • salt - 1/2 tsp
  • flour - 3/4 c
  • baking powder - 1 tsp
  • powdered sugar - 1 c
  • ginger - 1/2 tsp
  • margarine
  • nuts optional - 1 c
  • lemon juice - 1 tsp
  • pumpkin mix - 1 c

How to make pumpkin roll:

Filling:4 Tbsp. margarine1 (8 oz.) pkg. cream cheese1 c. powdered sugar1/2 tsp. vanilla Beat eggs at high speed for 5 minutes. Add sugar slowly. Stir in pumpkin mix and lemon juice. Mix dry ingredients together; fold into pumpkin mixture. Blend well. Pour evenly into 15 x 10-inch jelly roll pan which has been sprayed with Pam. Bake at 375° for 15 minutes. When done, turn out onto towel coated heavily with powdered sugar. Roll up from short end. Refrigerate on towel until cold.

Filling: Beat all ingredients well. Unroll cake from towel and spread filling on roll. Roll up again. Wrap in foil or waxed paper and refrigerate.

Note: Use a clean towel.
