Creole meat loaf
Ingredients/Components
- salt - 1/2 tsp
- cornstarch - 1 Tbsp
- water - 2 Tbsp
- dry mustard - 1/2 tsp
- chopped onion - 3/4 c
- parsley for garnish - 1 item
- can evaporated milk - 1 item
- tomato juice
- green pepper, chopped - 1/2 item
- eggs, slightly beaten - 2 item
- dried thyme - 1/4 tsp
- seasoned bread crumbs - 3/4 c
- ground round
- can sliced mushrooms and liquid - 1 oz
- Shape into a loaf and place in an 8 1/2 x 4 1/2-inch lightly oiled loaf pan
How to make creole meat loaf:
Combine meat loaf ingredients. Shape into a loaf and place in an 8 1/2 x 4 1/2-inch lightly oiled loaf pan. Bake at 350° for 1 hour. Cool 10 minutes.Creole Sauce:2 Tbsp. butter or margarine1/2 green pepper, chopped3 Tbsp. chopped onion1 (2 oz.) can sliced mushrooms and liquid1 1/2 c. tomato juice1 Tbsp. cornstarch1/4 tsp. salt1/4 tsp. dried thyme2 Tbsp. water Prepare Creole Sauce by melting butter in a small saucepan. Add green pepper and onion. Saute 2 to 3 minutes. Remove from heat. Add mushrooms with liquid and tomato sauce. Mix cornstarch, salt and thyme with water. Stir into pepper and onion mixture. Return pan to heat. Bring to boiling. Boil, stirring, for 1 minute or until sauce thickens.Slice meat loaf into 3/4-inch pieces. Spoon hot Creole Sauce over slices. Garnish with parsley.
